To make the strawberry jam, rinse five 1-cup plastic containers with boiling water, then cut the stems off of 1 quart of fully ripe strawberries. Crush the strawberries completely, stir in 4 cups of sugar and let the mixture stand for 10 minutes. In a small saucepan, bring 3/4 cup of water and a packet of Sure-Jell to a boil, and add it to the fruit mixture until the sugar dissolves. Fill the containers, cover with a lid and allow to set for 24 hours before using.
To make the banana nut butter, prepare jars for canning. Mash 10 bananas and place in a saucepot with a tablespoon of lemon juice, a teaspoon of Ever-Fresh fruit protector, a box of Sure-Jell and 1/2 teaspoon of butter. Bring to a boil, stirring constantly, and add 4 cups of sugar and 1/2 cup of light brown sugar. Mix well, then add 2 cups of lightly toasted walnuts, 1 1/4 teaspoon of cinnamon and 1/4 teaspoon of nutmeg.
Put the mixture into the prepared jars, place into a canner and process for 10 minutes before removing the jars and allowing them to cool. Check the seals on the jars and refrigerate before serving.
