To make Paula Deen's lemon basil chicken recipe, combine 4 cups of cooked diced chicken with a rib of minced celery, 1/4 cup of fresh basil and 1/4 cup of slivered almonds. In a separate bowl, combine 1/2 cup each of sour cream and mayonnaise, 1 1/2 teaspoons of lemon juice, 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Add this to the chicken mixture, mix and chill before serving.
To make the southern chicken salad, chop up 4 cups of cooked chicken and place in a bowl. To the bowl, add a cup of minced celery, 1/2 cup of chopped onion, 1/4 cup of sweet pickle relish and 1/2 cup of mayonnaise. If desired, add a teaspoon of sugar, and then 1/4 teaspoon each of salt and black pepper. Before mixing everything together, add a teaspoon of yellow mustard and a chopped boiled egg. Stir the mixture together, cover it and store in the refrigerator before serving.
