Hearty Chicken Recipe for the Soul: Homemade Chicken Soup Recipe

Whether warding off the cold temperatures or simply looking for a hearty chicken recipe, chicken noodle soup feeds any meal purpose. Many people believe that there are healing powers that come in a bowl of steaming hot chicken soup when cold and flu season hits. With its savory flavors and colorful contents, it is always a pleasure to sit down to a bowl of homemade chicken soup.


1. Place whole rotisserie chicken, sliced carrots, celery pieces and diced onions in a soup or stock pot.

2. Fill pot with enough water to cover all ingredients completely.

3. Simmer uncovered pot over medium heat. Allow meat to fall off bone during cooking process.

4. Skim away foam as it forms on top of broth.

5. Remove chicken bones from the soup pot.

6. Using a fork, remove any remaining meat from the chicken bones. Return the meat back to the soup pot.

7. Add salt, pepper and chicken bouillon to suit the taste.

8. Add kluski noodles to the soup contents. Allow the noodles to cook thoroughly. Stir the contents occasionally throughout the cooking process to ensure that the noodles do not stick together.

9. Remove soup pot from heat and serve.

10. Place any remaining soup in an airtight container. Store the soup in a refrigerator for up to one week.


  • Substitute a favorite rice for the kluski egg noodles. When choosing to cook the soup with rice, only cook the rice until it is al dente, or is still a little firm.
  • For a richer chicken flavor, substitute 4 cups of water with 4 cups of chicken broth. Choose a fat free, low sodium chicken broth for a heart healthy soup.
  • Allow soup to cool completely before placing it in a plastic container. This will maintain the flavor the soup. Soup should always be cooled to room temperature before placing in the refrigerator.
  • Soup can be stored in a freezer-safe container and placed in a freezer for up to 6 months.

  • 4 medium carrots, sliced to desired thickness
  • 4 stalks celery, cut in 1/2-inch pieces
  • 2 cups medium kluski egg noodles
  • 1 diced large onion
  • Enough water to cover all ingredients in pot
  • 1 chicken bouillon cube
