Healthy recipes that use the Veggetti include beet salad, butternut squash noodles and zucchini noodle pad thai. The Veggetti cuts vegetables into long, noodle-like strips. Use these vegetable noodles as a substitute for traditional noodles to make any pasta dish healthier.
To make beet salad, first cut 3 medium beets with the Veggetti. To make the dressing, combine 2 cups fresh lemon juice, 3 cloves garlic, 3 tablespoons minced ginger, 3 tablespoons tamari, 3 teaspoons honey, 1 1/2 cups olive oil and 1 handful of Brazil nuts. For butternut squash noodles, peel and seed one butternut squash. Cut the squash into noodles using the Veggetti. Place the noodles on a non-stick or greased baking pan and bake for 30 to 40 minutes at 200 degrees Fahrenheit. Serve the noodles with the desired sauce or toppings.
For zucchini noodle pad thai, use a pad thai recipe and substitute Veggetti-cut zucchini for traditional noodles. Inspiralized's recipe for this dish calls for 2 tablespoons lime juice, 1 tablespoon fish sauce, 1/2 tablespoon soy sauce, 1 tablespoon chili sauce and 1 teaspoon honey. Pour these ingredients into a saucepan and add 1 minced shallot, 1 minced garlic clove, 1 tablespoon coconut flour and 1/2 teaspoon peanut oil. Heat the mixture until thickened, then add zucchini noodles. Top with crushed peanuts and scrambled eggs.
