Some healthy recipes using coconut oil are Carrot Cake Granola from Gimme Some Oven and Naturally Ella's Southwest Loaded Sweet Potato Fries. The granola is drizzled with coconut oil for extra sweetness, and the sweet potato fries are tossed in coconut oil before baking.
To make the Carrot Cake Granola, combine 2 cups old-fashioned oats, 1 cup shredded carrots, 1 cup pecans, 1 cup walnuts and 1/2 cup shredded coconut with 1/4 cup maple syrup and 1/4 cup melted coconut oil. Add in 1 teaspoon ground cinnamon, 1/2 teaspoon salt, 1/4 teaspoon ground ginger and 1/8 teaspoon ground nutmeg. Spread the granola onto a baking sheet and bake for 25 minutes at 350 degrees Fahrenheit, stirring halfway through. Let the granola come to room temperature, then stir in 1/2 cup raisins. Store the granola in a sealed container for up to two weeks.
For the Southwest Loaded Sweet Potato Fries, cut a large sweet potato into fries, rinse under cold water, and pat dry. Toss the fries in 1 tablespoon coconut oil, 2 tablespoons cornmeal and 1 tablespoon adobo seasoning. Place the fries on a baking sheet, and bake for 35 to 45 minutes at 400 degrees Fahrenheit. Top the fries with 2 ounces queso quesadilla cheese and bake for an additional four to six minutes. Top the fries with a combination of 1/2 cup black beans, 1 cup shredded spinach, an avocado and 1/4 cup diced red onion tossed with 1 tablespoon lime juice, 2 tablespoons minced cilantro, 1 teaspoon honey and 1/2 tablespoon olive oil.
