Make healthy romesco garlic shrimp with zucchini noodles by first whipping up the romesco sauce. Toast 1/2 cup of chopped almonds in 2 tablespoons of cooking fat for three minutes at medium-high heat, then add 1 small diced onion. After two minutes, stir in 3 cloves of minced garlic, and cook for one minute. Add 1 teaspoon of paprika and 1 teaspoon of chili powder, and cook for 30 seconds before stirring in 2 chopped tomatoes.
