Make healthy romesco garlic shrimp with zucchini noodles by first whipping up the romesco sauce. Toast 1/2 cup of chopped almonds in 2 tablespoons of cooking fat for three minutes at medium-high heat, then add 1 small diced onion. After two minutes, stir in 3 cloves of minced garlic, and cook for one minute. Add 1 teaspoon of paprika and 1 teaspoon of chili powder, and cook for 30 seconds before stirring in 2 chopped tomatoes. Allow the mixture to cook for two more minutes before blending in a food processor on low, and refrigerate before serving.
Prepare the zucchini noodles by peeling 4 medium zucchini and then slicing them into thin noodles with a julienne peeler. Set aside the seeded core for another meal, and steam the noodles for two to three minutes. Cook 1/4 minced onion in 2 tablespoons of cooking fat at medium heat in a skillet. After two minutes, add 2 minced garlic cloves for another minute before stirring in 1 pound of large deveined shrimp.
