Some of the most healthy kale salad dressing recipes include a simple olive oil and fresh lemon juice dressing, a honey-mustard vinaigrette and a tahini-lemon dressing. To make the honey-mustard vinaigrette, whisk together 1 1/2 tablespoons of cider vinegar, 1 tablespoon of olive oil, 1 teaspoon of Dijon mustard and 1 teaspoon of honey. Season the mixture with 1/4 teaspoon each of salt and pepper, and toss it with kale, red onion and sunflower seeds.
The lemon and olive oil dressing is a warm dressing that you need to make in a skillet. Whisk together 1 tablespoon of fresh lemon juice, 1 tablespoon of olive oil, 1/2 teaspoon of sugar, 1/2 teaspoon of freshly ground black pepper and 1/4 teaspoon of kosher salt in a skillet with 4 cups of torn kale and 2 cups of torn Swiss chard. Heat the salad and dressing at medium heat for five minutes. Add 4 teaspoons of unsalted pumpkinseed kernels, 1/4 cup of sliced green onions and 1 ounce shaved pecorino Romano.
A variation of the recipe uses 1 tablespoon each of rice vinegar and soy sauce, 2 teaspoons of sesame oil, 1/2 teaspoon of brown sugar and 1/4 teaspoon of chili garlic sauce for the dressing.
