Healthy recipes for chicken soup can be found on FamilyFreshMeals.com and WholeFoodsMarket.com. Family Fresh Meals' soup contains egg noodles and is made in a slow cooker, whereas Whole Food's soup calls for brown rice and is made on the stovetop.
To make Family Fresh Meals' recipe, add 1 1/2 pounds of chicken breasts, 2 cups of chopped carrots, 1 diced onion, 3 chopped celery stalks and 3 to 4 minced garlic cloves, as well as 3 tablespoons of olive oil, 1/2 teaspoon of thyme and 1 bay leaf to a slow cooker. Add 6 cups of chicken broth, 1 cup of water and salt and pepper, to taste. Cook the soup on low for six to seven hours.
Cut the cooked chicken breasts into pieces, and return them to the slow cooker along with 2 cups of uncooked egg noodles and 3 tablespoons of parsley. Cook for five to 10 more minutes.
To make Whole Foods' recipe, bring 1/2 cup of chicken broth to a simmer, and add 1 chopped onion, 3 chopped carrots and 2 chopped celery stalks. Cook for eight minutes, stirring occasionally. Pour in 7 1/2 cups of chicken broth and 2 cups of water, and add 1 cup of brown rice, 1 cubed chicken breast and 1 bay leaf.
Bring the soup to a boil, reduce the heat, and simmer it for 35 minutes while covered. Remove the bay leaf, and add 1 thinly sliced bunch of kale. Cook for three to five more minutes.
