To make the light and easy broccoli slaw, bring 1/2 cup of water to a boil. Put 1/3 cup of currants in a small bowl and add the hot water. Let the currants sit for five minutes, then drain. In a food processor, use the grater disk to shred 2 pounds of broccoli. Transfer the shredded broccoli to a large bowl. Add the currants, 2 chopped onions, and 3/4 cup of almonds, and combine.
In a clean bowl, whisk 2 tablespoons mayonnaise, 1/2 cup of mayonnaise, and 2 tablespoons vinegar. Add a 2 tablespoons of sugar, 1 teaspoon salt, and 2 tablespoons ground pepper and combine. Pour this mixture over the broccoli and stir well. Add more pepper or salt, if necessary. Refrigerate for one hour and serve.
Alternatively, substitute the currants with dried cranberries for a different taste. Additionally, you can add raisins and peanuts instead of almonds, to raise the protein value in this salad. Sliced grapes or pecans can also make this broccoli slaw healthier.
