Orange-scented green beans with toasted almonds and green beans with shallots, hazelnuts and tarragon are both healthy meals. An easy-to-prepare barbecue dish is black bean and walnut burgers.
To make orange-scented green beans with almonds, toast 1/4 cup of sliced almonds while steaming 1 pound of trimmed green beans. When they are ready, mix them in a bowl with 1/2 teaspoon of freshly grated orange zest, 1 teaspoon of extra-virgin olive oil, and some salt and freshly ground pepper.
Green beans with shallots, hazelnuts and tarragon is also a simple dish to prepare. First, toast 6 tablespoons of hazelnuts, then rub them with a kitchen towel to remove their skins, chop them, and set them aside.
Melt 1 tablespoon of butter in a large saucepan, add 1 cup of sliced shallots, and cook them, stirring, until they take a light golden color. Remove them and set them aside as well. Add 1/2 cup of water, 2 tablespoons of butter, and salt and pepper to the pan. Lower the heat and add the green beans.
Cover the pan and cook for three minutes. Remove the lid, raise the heat and cook until the beans are glazed. Toss them in a bowl with 3 tablespoons of fresh tarragon leaves, 1 1/2 teaspoons of grated lemon zest and the hazelnuts and shallots.
For the burgers, purée 2 1/2 cups of canned black beans with 2 tablespoons of cumin, 3 tablespoons of chili powder and cayenne pepper. Add 1/2 cup of cooked brown rice, 1/2 cup of chopped walnuts, 1/3 cup of chopped red onion and 3 tablespoons of canned corn and mix. Add some water if the mix is too dry. Season with salt and pepper, divide into eight burgers and grill.
