Baking is a healthy way to prepare haddock and cooks can choose recipes such as classic baked haddock from AllRecipes.com or Italian-style baked haddock from Epicurious. Healthy haddock fillets are featured in both recipes.
The classic baked haddock recipe requires 25 minutes of preparation and cooking time and serves four people. In a small bowl, combine 3/4 cup milk with 2 teaspoons salt. In another bowl, combine 3/4 cup breadcrumbs with 1/4 cup grated Parmesan cheese and 1/4 teaspoon ground thyme. Dip 4 haddock fillets into the milk mixture, and then cover both sides of fillets in the breadcrumb mixture. Transfer the fillets into a glass baking dish, and drizzle 1/4 cup melted butter evenly on top of fillets. Place the baking dish on the top oven rack, and bake for 15 minutes at 500 degrees Fahrenheit.
For Italian-style baked haddock cook 1 small chopped onion, 1 chopped green bell pepper and 1/4 teaspoon crumbled dried basil in 1/4 cup butter for 10 minutes. Stir in one 14 1/2-ounce drained can of diced tomatoes. Add salt and pepper to taste, cook and stir for five minutes. Place 1 1/2 pounds haddock fillets into a baking dish, cover with tomato sauce, and sprinkle 2 cups mozzarella cheese on top. Bake for 25 minutes at 350 degrees Fahrenheit.
