Some healthy cauliflower recipes include cauliflower caviar with frizzled prosciutto, fall vegetable curry, baked Italian-style cauliflower, and roasted cauliflower, chickpeas and olives. Some other healthy recipes are mahi mahi with cauliflower, Sicilian cauliflower pasta and shepherd's pie.
To make Sicilian cauliflower pasta, cook pasta according to package instructions, reserving 1/4 cup of the liquid, and grate 1/2 head of cauliflower. Place the grated cauliflower along with 2 tablespoons of olive oil in a skillet, and heat to medium-high. Add 1 finely chopped garlic clove, 1 pinch of red pepper flakes, 1/4 teaspoon of salt and 3 tablespoons of golden raisins, and cook for four minutes. Add the drained pasta and 1/2 cup of reserved cooking liquid to the cauliflower mixture along with 1 cup of chopped fresh parsley, 1/4 cup of chopped fresh dill, 1 tablespoon of fresh lemon juice and 2 tablespoons of grated Parmesan cheese. Toss everything well, and serve sprinkled with more grated cheese and salt.
Make baked Italian-style cauliflower by sautéing 1 cup of chopped onion in 1 tablespoon of olive oil at medium-high heat for four minutes and adding 4 minced garlic cloves. After less than a minutes, add 6 ounces of lean ground sirloin, 1/4 teaspoon of salt, 1/4 teaspoon of crushed red pepper and 1/4 teaspoon of black pepper. After the meat browns, add 1 1/2 cups of lower-sodium marinara sauce and 2 ounces of chopped and pitted kalamata olives. Steam 1 1/2 pounds of cauliflower cut into florets, place them in a baking dish, and then stir in the meat and sauce mixture. Top the cauliflower with 1 ounce of breadcrumbs mixed with 1/4 cup of grated Pecorino Romano cheese, and broil everything for four minutes.
