Food Network has simple and easy to follow recipes for healthy breakfast ideas. The breakfast burritos recipe yields four servings, while the baked French toast yields six servings.
To make the breakfast burritos, heat 2 teaspoons canola oil in a skillet over medium-high heat. Cook 1 cup diced small red onion and 1 seeded and diced red bell pepper for eight minutes. Add 1 cup drained, rinsed, canned black beans and 1/4 teaspoon chili flakes, and cook for three minutes. Season with salt and pepper, and set aside. Whisk 4 eggs and 4 egg whites. Stir in 1/3 cup shredded pepper jack cheese. Add eggs to a skillet over medium heat, and scramble, cooking for three minutes. Spread 4 10-inch whole-wheat tortillas with 1 tablespoon sour cream, 1 tablespoon salsa, 1/4 black bean mixture, 1/4 scrambled eggs, diced tomatoes and 1/4 avocado. Roll up, and serve.
To make the French toast, grease a 9-by-13-inch baking dish. Arrange 24 1-inch whole-wheat bread slices in rows of three. Whisk together 12 ounces evaporated milk, 1 cup milk, 1 teaspoon vanilla, 1/4 teaspoon almond extract, 1/4 teaspoon ground cinnamon, a pinch of kosher salt and 4 large eggs. Pour the mixture over the bread, and refrigerate for eight hours. Preheat the oven to 350 degrees Fahrenheit. Sprinkle 1/3 cup chopped pecans, 2 tablespoons maple syrup and 1/8 teaspoon ground cinnamon over the top. Bake for 40 minutes.
