Spread 4 10-inch whole-wheat tortillas with 1 tablespoon sour cream, 1 tablespoon salsa, 1/4 black bean mixture, 1/4 scrambled eggs, diced tomatoes and 1/4 avocado. Roll up, and serve.

To make the French toast, grease a 9-by-13-inch baking dish. Arrange 24 1-inch whole-wheat bread slices in rows of three. Whisk together 12 ounces evaporated milk, 1 cup milk, 1 teaspoon vanilla, 1/4 teaspoon almond extract, 1/4 teaspoon ground cinnamon, a pinch of kosher salt and 4 large eggs. Pour the mixture over the bread, and refrigerate for eight hours. Preheat the oven to 350 degrees Fahrenheit. Sprinkle 1/3 cup chopped pecans, 2 tablespoons maple syrup and 1/8 teaspoon ground cinnamon over the top. Bake for 40 minutes.
