To make four servings of Spiced Salmon With Mustard Sauce, combine 2 teaspoons of whole grain mustard, 1 teaspoon of honey, 1/4 teaspoon of ground turmeric, 1/4 teaspoon of ground red pepper, 1/8 teaspoon of garlic powder, and 1/4 teaspoon of salt in a small bowl while stirring with a fork. Rub the mixture evenly over each of 4 6-ounce salmon fillets. After coating a jelly-roll pan with cooking spray, place the fillets on the pan with the skin side down. Finally, broil the fillets for eight minutes or until they flake easily when tested with a fork. Add a salad or vegetable of your choice and serve.
To make four servings of Beef Stir-Fry With Avocado Salad, combine 12 ounces of thinly cut beef tenderloin into a bowl with 2 tablespoons of lime juice and 1 tablespoon of chili powder. Next, heat 1 tablespoon of vegetable oil in a large skillet. Add 1 thinly sliced sweet onion, red bell pepper and poblano into the skillet, and saute and stir it for five minutes.
Add the beef mix to the skillet with the vegetables and cook for three to four minutes. Season it with salt and black pepper. In another bowl, combine 1 can of black beans with 1 diced avocado, 1/4 cup of crumbled Cojita cheese, 1/4 cup of cilantro, 2 tablespoons of lime juice, and 1/2 teaspoon of chili powder. Garnish the beef and vegetables with cilantro, and serve with the avocado salad.
