To prepare the deviled pumpkin-egg recipe, begin by placing all 12 eggs into a pot, and bring them to a boil. Once they begin to boil, turn off the heat, cover the pot, and let them stand for 10 minutes. In the meantime, combine 2 teaspoons of paprika, 1 teaspoon of smoked paprika and 1/2 teaspoon of cayenne into a small bowl, and mix thoroughly.
Once the eggs are fully cooked, remove them from the pot, and run them under cold water to ensure they can be handled. Peel all of the eggs, cut them in half, and remove the yolk centers. Place the yolks into a large bowl, and grate 2 tablespoons of onion and 1 clove of garlic directly over top to catch the juices. Add 2 tablespoons of pickle relish, about 1 teaspoon of Worchestershire sauce, 1 tablespoon of Dijon or yellow mustard, 1 or 2 tablespoons of hot sauce, salt and pepper to taste and 1 teaspoon of the paprika-spice mixture. Mix in 3 tablespoons of mayonnaise, adding additional mayonnaise if the yolk mixture is too dry. Pipe the yolk mixture into the halved egg whites, and top with a dash of the paprika-spice mixture and chopped scallions.
