One way to make grilled cod is by cooking it directly on a grill while basting it with a mixture of spices. It is also possible to grill cod in aluminum foil together with vegetables.
To make grilled cod, mix 1 tablespoon of Cajun seasoning, 1/2 teaspoon of lemon pepper, 1/4 teaspoon of salt and 1/4 teaspoon of ground black pepper in a small bow. Rub the spice mixture all over 2 8-ounce cod fillets that have been sliced in half. In a saucepan, melt 2 tablespoons of butter, add the juice of one lemon and 2 tablespoons of chopped green onion to the saucepan, and cook everything for about three minutes. Prepare the grill for cooking, coat the grates lightly with oil, and put the fish on them. Cook the fish for about three minutes on each side, baste the fish with the onion sauce while cooking.
To grill cod in aluminum foil, cut out pieces of foil that are large enough for 4-ounce pieces of cod, coat the foil with cooking spray, and place cod on them. Coat the fish with some olive oil, and sprinkle it with salt, pepper and herbs to taste. Place 2 tablespoons of chopped carrots and 2 tablespoons of chopped onions in a bowl, add some oil and herbs, and mix everything together. Add the vegetables to the fish in the foil, and fold the foil. Cook the fish for about four minutes on each side.
