To grill fresh pineapple for dessert, peel and core a pineapple into 1/2-inch slices for eight servings. Gather 1/2 cup of brown sugar, 1 tablespoon of lime juice, 1 tablespoon of lemon juice, 2 tablespoons of honey, 1/4 teaspoon of cinnamon and 3 cups of orange or lime sorbet.
Preheat the grill and mix the sugar, juices, honey and cinnamon until the texture is smooth. Smear the mixture on both sides of each pineapple slice. Set the pineapple 4 to 5 inches from the coals on medium heat for five to 10 minutes. Turn the pineapple slices one time and keep them on the grill until the mixture melts and the pineapples are hot and tender. Scoop sorbet onto each slice of pineapple and serve the dessert right away.
Another way to grill pineapple for dessert involves 1/2 gallon of vanilla ice cream. Mix 1/2 cup of brown sugar, 2 tablespoons of melted butter, 1 teaspoon of cinnamon and 2 tablespoons of lemon juice. Once the mixture is even, smear it on the pineapple slices. Preheat the grill and give each side one minute on the grill or grill until both sides are brown. Put a scoop of vanilla ice cream on each slice.
