The ingredients for green chile sauce include canola oil, Spanish onion, a large jalapeño pepper, a clove of garlic and flour. Also required are chopped and roasted green chiles, white vinegar, sea salt, cracked black pepper and lime juice.
Green chile sauce takes five minutes to prepare, and the cooking time is 15 minutes. First, add the canola oil to a pot over medium-high heat. Once hot, add the onions and jalapeño and sauté for four to five minutes. The contents should begin to caramelize within this time frame. Add the garlic and cook for one minute longer.
Reduce the heat to medium and slowly add in the flour, stirring constantly. After approximately two minutes, add the liquid from the can of chiles, water, vinegar and salt. Stir until the contents are smooth and the flour is completely dissolved.
Lastly, add the green chiles and peppers, and simmer for approximately five minutes. Purée either in a blender or with a stick blender and add the lime juice.
Green chile sauce is a relatively simple but tasty addition to traditional Mexican dishes. It is also frequently served with chips as an appetizer or just as a snack item. Green chile sauce can be kept in the refrigerator for up to one week.
