Some good recipes for baking a whole cauliflower are Mustard-Parmesan Whole Roasted Cauliflower, Whole Roasted Cauliflower with Olive Oil and Capers and Jamie Oliver's Whole Roasted Cauliflower. The latter calls for garlic, smoked paprika, fresh thyme, olive oil and sea salt.
To make Jamie Oliver's Whole Roasted Cauliflower, prepare a paste made from 4 cloves of garlic, 1 teaspoon of smoked paprika, 1/4 bunch of fresh thyme, olive oil, and sea salt and pepper to taste. Rub the paste on 1 large cauliflower head, and sprinkle it with the juice from 1 lemon and 4 tablespoons of dry sherry. Roast the cauliflower covered at 350 degrees Fahrenheit for 60 minutes, remove the lid and cook for another 20 minutes. Add 1 can of tomatoes and the zest from 1 lemon to the cauliflower, and bake it for another 10 minutes. Serve the cauliflower sprinkled with 1 1/2 ounces of toasted almond, 1/2 bunch of parsley and extra-virgin olive oil.
Make Mustard-Parmesan Whole Roasted Cauliflower by brushing 2 cauliflower heads with a rub made from 1/4 cup of olive oil, 3 tablespoons of Dijon mustard, 1/2 teaspoon of salt and freshly ground black pepper and roasting the cauliflower at 450 degrees Fahrenheit for 50 to 60 minutes. Brush the cauliflowers with 1 tablespoon of Dijon mustard, and sprinkle them with 1/4 cup of grated Parmesan and 1/2 cup of chopped fresh parsley.
