Some good recipes for baked pork tenderloin are the Food Network's Pork Tenderloin with Seasoned Rub and Balsamic Roast Pork Tenderloins. Bon Appetit also provides a good recipe: Weeknight Porchetta.
To make Weeknight Porchetta, a bacon-wrapped pork tenderloin, toss 4 minced garlic cloves, 1 tablespoon of coarsely chopped fresh rosemary, 1 tablespoon of chopped fennel seeds, 1 1/2 teaspoons of kosher salt and 1 tablespoon of olive in a bowl. Rub the mixture over a 1 1/2-pound pork tenderloin, and wrap 4 slices of bacon around the meat. Place the meat in a baking dish containing 4 fresh rosemary sprigs and 2 heads of halved garlic heads. Drizzle 1 tablespoon of olive oil over the meat and garlic, and roast it at 425 degrees Fahrenheit for 40 to 45 minutes. Allow the meat to rest for a few minutes before cutting it.
To make Balsamic Roast Pork Tenderloins, rub 4 tablespoons of balsamic vinegar into four 1/2 pound pork tenderloins, and slide 8 cracked garlic cloves into slits in the meat. Sprinkle 4 tablespoons of extra-virgin olive oil over the meat, and rub on a seasoning made from salt, pepper, 4 sprigs of chopped fresh rosemary and 4 sprigs of chopped fresh thyme. Bake the tenderloins at 500 degrees Fahrenheit for 20 minutes.
