Make a simple and tasty tailgate chili by first chopping 2 large onions and 2 cloves of garlic and frying them over medium heat in a large pot. When the mixture has become translucent, add 1 pound of ground beef and allow it to brown before stirring in 3 tablespoons of chili powder, 1 tablespoon cumin, 1 teaspoon of chili flakes and 1 teaspoon of ground cinnamon. When the spices begin to release their aroma, add a bottle of beer, 28 ounces of diced tomatoes, 38 ounces of kidney beans, and salt and pepper to taste. Bring the pot to a boil, and then simmer until the chili becomes thick. Serve with the toppings of your choice.
Potato salad is a staple at any tailgate party and is simple to make. Dice 3 pounds of red or white potatoes, leaving the skins on, and boil until tender in a salted pot of water. Drain when finished cooking, rinse the potatoes under cold water, and allow them to dry. Place the potatoes in a large bowl and combine with 1 to 2 cups of mayonnaise, 2 stalks worth of diced celery, chopped dill pickles and 1 thinly sliced red onion. Add salt and pepper to taste.
