To make cheesy potatoes, combine in a greased baking dish 1 pound baking potatoes cut into 1/2 inch cubes, 1/2 pound cheddar cheese cut into 1/2 inch cubes, 1/2 cup chopped onion and 1/2 cup mayonnaise. Bake at 375 degrees Fahrenheit for 45 minutes.
To make cheesy smashed potatoes, place 2 pounds of Yukon gold potatoes cut in half into a pot, cover potatoes with water and bring to a boil. When the water boils add two pinches of salt and boil for 10 minutes or until tender. Drain the potatoes, and return them to the pot. Smash the potatoes, and combine 1/4 cup sour cream and 2 cups shredded cheddar cheese in the pot. Add 3 tablespoons chopped chives, salt and pepper, then smash them again.
Alternatively, make a cheesy potato casserole by whisking together one 10.75-ounce can of condensed cream of chicken soup, 2 cups sour cream, 1 teaspoon salt and 1/4 teaspoon pepper. Stir in 2 cups shredded cheddar cheese, 1/3 cup sliced green onions and one 30-ounce package of shredded hash browns until mixed evenly. Evenly spoon the mixture into greased 13x9 inch baking dish. In a medium bowl, mix together 2 cups crushed, corn flake cereal, and 1/4 cup melted butter. Sprinkle it on top of potato mixture, and bake uncovered at 350 degrees Fahrenheit for 45 to 50 minutes.
