Make chocolate-hazelnut icebox cake by creaming together 1 cup of heavy cream, 3/4 cup of mascarpone, 1/3 cup of confectioners' sugar and 1 teaspoon of vanilla extract until stiff peaks form. In a separate bowl, whip 3/4 cup of heavy cream, 3/4 cup of mascarpone and 2/3 cup of chocolate-hazelnut spread into stiff peaks. To assemble the cake, spread a layer of chocolate graham crackers on the bottom of a springform pan, add half the vanilla cream mixture, add more chocolate graham crackers, and top with half of the chocolate-hazelnut mixture. Repeat the layers, ending with the chocolate mixture on top. Chill the cake for six hours before serving.
To make graham cracker icebox cake, mix together 2 1/2 cups of milks and 2 packages of instant vanilla pudding mix. While the pudding sets, whip 1 1/2 cups of heavy cream, 3 tablespoons of powdered sugar and 1 teaspoon of vanilla until stiff peaks form, and then stir the mixture into the pudding. Layer graham crackers at the bottom of a pan, add half the pudding mixture, and repeat the layers ending with graham crackers on top. Frost the top of the cake with 16 ounces of chocolate frosting combined with 1/2 cup of whipping cream.
