When the beef is done, transfer it to a warm plate, and cover it with foil. Let the beef rest in a warm place until it is ready to serve.
To make Yorkshire pudding, sift 1 cup of flour and 1/2 teaspoon of salt. Beat in 4 eggs and 5/8 cup of milk. Add another 5/8 cup of milk. Pour 1 teaspoon of oil from the beef roast pan into each section of a 12-hole muffin tray. Bake on the top oven shelf at 450 F, until the oil is almost smoking.
Whisk the batter and fill the muffin tray with it until each cup is three-fourths full. Return to the oven for 12 to 20 minutes.
To make gravy, remove the excess fat from the beef roast pan, and heat the pan on medium heat. Add 3 to 4 sprigs of thyme, 4 garlic cloves, 2 sliced red onions and 4 halved plum tomatoes. Cook for 4 to 5 minutes, and add 1/2 bottle of red wine. Bring to a simmer, and add 5 cups of beef stock. Cook for 10 minutes, and pour the gravy through a sieve.
