Make good zucchini bread by separating the wet and dry ingredients. Stir 1 cup of chopped walnuts or pecans into the batter, pour into two bread pans and bake the bread at 350 degrees for 60 minutes.
For a zucchini bread recipe with a bit of orange flavor, whisk 2 eggs and 1/3 cup of oil. Mix in 1 1/2 cups of shredded zucchini and 1/2 teaspoon of grated orange peel. In another bowl, combine 1/12 cups of flour, 3/4 cups of sugar, 2 1/4 teaspoons of baking powder, and 1/2 teaspoon each of salt and ground cinnamon. Stir in 1/2 cup of chopped walnuts. Combine the dry and wet ingredients, pour the batter into a loaf pan and bake at 350 degrees for 70 minutes.
