A simple roasted goose is a traditional Christmas dinner. One recipes uses a 12-lb. goose, honey, Tabasco sauce, salt, ground black pepper, potato starch and water. The goose is cut halfway through the leg and wing joints so it cooks evenly and then seasoned with salt and black pepper. Place the goose in a heavy roasting pan with the neck, heart, gizzards and water. Cover the goose, bring the water to a boil, then reduce the heat to steam the goose. Mix the rest of the ingredients and use to baste the goose. Roast the goose at 350 F until the inner thigh registers 170 F.
Wild goose can also be slow cooked in pieces using a slow cooker. One recipe uses a marinade of soy sauce, lemon juice, canola oil, garlic powder and Worcestershire sauce. Refrigerate the goose for at least 4 hours in the marinade before cooking. Drain the marinade then coat the goose with flour and brown with butter in a skillet. Add the goose to a slow cooker with onion soup mix, water and mushroom soup. Cook on high for 4 to 5 hours.
