To make a white wine sauce, saute 1/3 cup chopped onion. Add in 1/2 cup fat free chicken broth, 1/4 cup dry white wine and 2 tablespoons of white wine vinegar. Boil and reduce to 1/4 cup of liquid. Remove from heat. Stir in chives and 2 tablespoons of butter.
To make a garlic white wine sauce, saute 4 tablespoons minced garlic with 1/2 teaspoon crushed red pepper until golden brown. Add in 1 teaspoon kosher salt, 1/2 teaspoon freshly ground pepper, 1/2 cup white wine and 5 tablespoon of unsalted butter. Continue to cook for two minutes and remove from heat.
