To make Food Network's recipe, beat 3 large eggs in a bowl with kosher salt and freshly ground black pepper. Set aside. In a skillet, heat 3 tablespoons butter, and add 1/2 diced green bell pepper and 1/2 diced red bell pepper. Cook, covered, for three minutes, or until tender. Uncover, and add 6 ounces diced boiled ham and 4 roughly chopped scallions. Cook for one minute, or until hot. Transfer into a bowl.
Melt a bit of butter in the skillet, and add 1/4 of the pepper mixture. Pour in the egg mixture, and cook for 30 seconds while stirring with a rubber spatula. Turn off the heat, and smooth over the top of the egg. Sprinkle 2 tablespoons grated white cheese on top, and let rest for 30 seconds. For a well-done omelet, cover the skillet, and let it rest for 30 seconds. Fold the omelet in half using a rubber spatula, and place on a warmed plate.
