Plank grilled trout is an impressive way to grill a whole trout. Prepare for this recipe the day before by soaking cedar planks in water overnight. Soak one plank for every trout to cook. Immediately before cooking, preheat the grill to 375 degrees Fahrenheit. Brush the trout with olive oil, and season with salt and pepper. Place a whole trout, opened up with the belly down on a cedar plank and cook over indirect heat until the fish is firm and flaking, or 120 degrees Fahrenheit.
To make a simple broiled trout, start by melting some butter until it turns golden brown. This is the sauce for the finished trout. Open up a whole, butterflied trout and place it skin side down on a piece of aluminum foil on a baking sheet. Brush the trout with butter and season it with salt and pepper. Preheat the oven's broiler and place the trout 5 to 6 inches below the heat source. In 2 to 3 minutes the trout is done cooking. Its skin should be opaque and its meat should be firm and flaky.
