If the brie cheese is refrigerated, the rind is easy to remove by trimming it off. If the brie cheese has been sitting at room temperature, the cheese can be scooped away from the rind after cutting into it.
The brie rind is edible, and it is usually not removed for consumption. The ideal brie is an inch or less thick and has a sweet aroma. Cheese that is thicker than that will be too ripe at the edges and not ripe enough in the center. Hard brie is underripe and should not be purchased. Ripe brie should remain refrigerated and eaten within several days.
