Prepare fresh pineapple by cutting lengthwise into quarters and then into strips or chunks. Alternatively, cut across into thin sections, and punch out the core from each section to create pineapple rings.
Cutting pineapple requires a sharp serrated knife and cutting board. First, remove the leafy crown along with the top 2 inches of fruit; this may be planted rather than discarded. Cut off the bottom inch of the pineapple, and remove the fruit skin. Remove the brown prickly eyes with a paring knife, and then quarter or slice the fruit. For pineapple rings, remove the core by using a cookie cutter or apple corer.
