Chefs Bobby Flay and Michael Symon both have bratwurst recipes that have ratings of 5 stars out of 5 stars. Both recipes can feed eight people and they are best served with condiments such as mustard.
To make the Bobby Flay version of bratwurst, place about a dozen brats in a Dutch oven. Cover the bratwurst with a medium cut onion, 1/2 stick of butter and beer. Bring the beer to a boil, and then simmer until the brats finish cooking. Grill the brats until they turn golden brown, and return them to the beer until ready to eat. Serve them on bratwurst buns with sides such as onions, sauerkraut, green peppers, mustard and ketchup.
To make the Michael Symon version of bratwurst, take about 2 pounds of fresh brats, and place them in a large pan with 2 tablespoons of oil. Cook over high heat, and then reduce to medium as the bratwurst begins to brown. Add 2 chopped onions and 2 minced garlic cloves, and then cook until they begin to caramelize. Add 3 cups of chicken stock, a tablespoon each of paprika and caraway seeds and 4 cups of drained sauerkraut.
Simmer this mixture for about 45 minutes, remove from the heat and stir in 2 tablespoons of fresh dill. Serve the brats on baguettes.
