A good way to cook barbecue port riblets is to grill them on low heat for a few hours with a barbecue sauce made from hoisin sauce, white wine, soy sauce and tomato paste or brown sugar, Worcestershire sauce and Cajun seasoning. A good basic recipe is honey barbecue riblets calling for a barbecue sauce of choice, liquid smoke and garlic.
To make honey barbecue riblets, season 2 pounds of pork riblets with salt and pepper to taste and 2 minced garlic cloves, and sear them on a grill at medium heat before placing them on the rack of a broiling pan. Fill the pan with 1 cup of water and 1 tablespoon of liquid smoke, and cook the meat at 275 degrees Fahrenheit for two to four hours. Serve them drizzled with 2 cups of barbecue sauce.
Make spicy Chinese barbecue riblets by whisking together 1 cup each of hoisin sauce and white sugar, 1/2 cup each of soy sauce and tomato paste, 1/3 cup of white wine, 1/4 cup of chopped garlic, and 2 tablespoons of hot pepper sauce. Bake 2 pounds of riblets at 350 degrees Fahrenheit for 45 minutes before brushing them with the sauce and baking them for another 45 minutes.
Another good barbecue sauce recipe calls for 3/4 cup of brown sugar, 1 tablespoon of Worcestershire sauce, 2 tablespoons of Cajun seasoning, 2 tablespoons of garlic powder and 1 tablespoon of black pepper.
