Place a leftover turkey carcass into a large pot, and add 2 stalks chopped celery, 2 chopped carrots, 1 peeled and quartered onion and 1 bay leaf. Add 8 cups of water and simmer several minutes on low. Strain and reserve turkey stock, discarding bones and vegetables. In another large pot, cook 1 chopped onion in 3 tablespoons melted butter. Stir in 1 cup chopped celery, 2 teaspoons dried thyme, 2 cups chopped carrots and 1 cup rice.
Add reserved turkey stock to the pot, and simmer until the rice and vegetables are tender. Stir in 2 cups cooked chopped turkey, 1 cup frozen corn, 3 tablespoons fresh parsley, salt and pepper, and simmer. To make creamy turkey soup, cook 2 cups sliced mushrooms, 3/4 cup each chopped celery and carrots and 1/4 cup chopped carrots in 1 tablespoon of extra-virgin olive oil. Once vegetables soften, add 1/4 cup all-purpose flour and 1/4 teaspoon each of salt and pepper, cooking and stirring two minutes. Stir in 4 cups reduced-sodium chicken broth and boil.
Stir in 1 cup quick-cooking wild rice, and then reduce heat, cover, and simmer until the rice is tender. Stir in 3 cups shredded turkey, 1/2 cup reduced-fat sour cream and 2 tablespoons chopped parsley, and heat thoroughly.Learn more about Cooking
