Some good turkey and rice recipes include Food Network's highly rated Kale-Turkey Rice Bowl, Martha Stewart's Quick Turkey and Rice Soup and Real Simple's Turkey Fried Rice. Each of these recipes is quick and easy to prepare and yields around four servings.
To make the Kale-Turkey Rice Bowl, first prepare a smooth puree of cilantro, water, jalapeno pepper, almonds and salt. Then brown ground turkey in a Dutch oven with oil and add onion, garlic and cumin to soften. Add some of the cilantro puree, along with potatoes and kale, bring to a boil, then reduce the heat to simmer, stirring for around 15 minutes until the potatoes have softened. Serve with either white or brown rice and top with more of the cilantro puree mixture.
For Martha Stewart's Quick Turkey and Rice Soup, saute leek, celery root and parsnip in butter seasoned with salt and pepper. Add turkey stock and bring to a boil before reducing the heat to simmer. When the vegetables are tender, add shredded cooked turkey, cooked rice and heat thoroughly to serve.
To make Turkey Fried Rice, leave long-grain white rice to cook while sauteing ground turkey with garlic, ginger and scallions. Add the cooked rice, along with frozen and snow peas, sliced carrots, hoisin sauce and rice vinegar. Serve with a scallion garnish.
