A good traditional ambrosia recipe is Kay's traditional pink ambrosia that calls for mandarin oranges, pineapple pieces, desiccated coconut, pink marshmallows and sour cream. Other good recipes include ambrosia from Southern Living and ambrosia from the Food Network.
Make a simple traditional ambrosial recipe by combining 1 can of drained mandarin orange segments, 1 can of drained pineapple pieces, 1 tub sour cream, 1 bag of halved pink marshmallows and 1 cup desiccated coconut in a bowl. Mix all the ingredients together thoroughly, then chill for two hours before serving. Another easy recipe uses only 2 tablespoons lemon juice, 1 24-ounce jar of drained mandarin orange segments, 1 24-ounce jar of drained pineapple chunks and 1/4 cup grated coconut. Toss the first three ingredients together, layer in a serving bowl, and top with coconut. Add two layers, cover, and chill before serving.
A more complex version of the salad requires beating 1/2 cup heavy cream with 1 tablespoon sugar. Once stiff peaks form, fold in 4 ounces sour cream and 6 ounces mini marshmallows. Add 1 cup clementine orange segments, 1 cup chopped fresh pineapple, 1 cup freshly grated coconut, 1 cup chopped toasted pecans and 1/2 cup drained maraschino cherries. Refrigerate for two hours, and serve.
