To roast chicken with lemon, be sure to cook it on low heat until the meat is 180 degrees Fahrenheit. If cooking a whole chicken, place the lemon into the cavity before roasting it. To keep the chicken warm before serving, make a tent out of aluminum foil.
Rinse the chicken before rubbing it with butter or a spice mixture, but pat it dry before coating it. Tie the wings of the chicken together, tucking the tips under the body of the chicken. After the chicken finishes cooking, drain the juices in the cavity before cutting it. Add flour to these juices to create a gravy.
