Food Network has simple and easy to follow recipes for tartar sauce from three of its stars, Ina Garten, Rachel Ray and Aaron McCargo Jr. Ina Garten offers a slightly more sophisticated version of this classic recipe, while Aaron McCargo Jr. has a seafood version.
To make Ina Garten's tartar sauce, mix 1/2 cups mayonnaise, 2 tablespoons small diced pickles or cornichons, 1 tablespoon Champagne or white wine vinegar, 1 tablespoon capers, 1 teaspoon coarse-grained mustard, a pinch of kosher salt and a pinch of freshly ground black pepper in a food processor. Pulse several times until the pickles are finely diced but the sauce is not pureed.
To make Rachel Ray's tartar sauce recipe, mix well 1 pint mayonnaise, 2/3 cup dill pickle relish, 2 tablespoons minced white onion, 1 ounce lemon juice and pickle juice to taste in a bowl. Refrigerate and serve as needed.
To make Aaron McCargo Jr.'s recipe, mix until well incorporated 1 cup mayonnaise, 1/4 cup sour cream, 1 tablespoon minced red onion, 1 teaspoon sweet pickle relish, the juice of 1/2 lemon, 1 teaspoon crab boil seasoning, 2 to 3 dashes hot sauce, a pinch of cayenne pepper, 1 teaspoon kosher salt and 1 teaspoon coarse ground black pepper.
