To make the sweet potato pie, preheat your oven to 350 F. To make the pie filling, add 2 cups of sweet potatoes, 1 cup of sugar, 1/2 a stick of melted butter, 2 eggs, 1 teaspoon vanilla extract, 1/4 teaspoon salt and 1/4 teaspoon each of cinnamon and ground ginger to an electric mixer. When this is well-combined, pour in 1 cup of milk. Pour the sweet potato mixture into an unbaked 9-inch pie crust, and bake for 35 to 45 minutes. Let the pie cool before topping with meringue.
To make the meringue, beat 3 egg whites in the electric mixer until soft peaks begin to form. After this, beat in the remaining 1/4 cup of sugar 1 tablespoon at a time. Continue this process until the mixture is shiny and has stiff peaks. Using a rubber spatula, place the meringue on top of the pie so that it touches the crust on all sides. Sprinkle a dash of sugar on top. Bake the pie for an additional 10 to 12 minutes or until it starts to lightly brown. The pie is now ready to eat.Learn more about Desserts
