Food Network's sweet potato pie recipe consists of cooked and peeled sweet potatoes, sugar, butter, eggs and a few other ingredients. This pie takes about 2 hours to complete and serves 6 to 8 people.
To make the sweet potato pie, preheat your oven to 350 F. To make the pie filling, add 2 cups of sweet potatoes, 1 cup of sugar, 1/2 a stick of melted butter, 2 eggs, 1 teaspoon vanilla extract, 1/4 teaspoon salt and 1/4 teaspoon each of cinnamon and ground ginger to an electric mixer. When this is well-combined, pour in 1 cup of milk. Pour the sweet potato mixture into an unbaked 9-inch pie crust, and bake for 35 to 45 minutes. Let the pie cool before topping with meringue.
To make the meringue, beat 3 egg whites in the electric mixer until soft peaks begin to form. After this, beat in the remaining 1/4 cup of sugar 1 tablespoon at a time. Continue this process until the mixture is shiny and has stiff peaks. Using a rubber spatula, place the meringue on top of the pie so that it touches the crust on all sides. Sprinkle a dash of sugar on top. Bake the pie for an additional 10 to 12 minutes or until it starts to lightly brown. The pie is now ready to eat.
