A good sugar-free cake recipe is sugarless spice cake. The sweetness of the cake comes from unsweetened applesauce, raisins and liquid artificial sweeteners such as Stevia.
To make the spice cake, pour 2 cups of water into a saucepan. Add 2 cups of raisins, and cook until the raisins have completely absorbed the liquid. Remove from heat. Meanwhile, beat 2 eggs in a separate bowl. Mix 1 cup of unsweetened applesauce, 2 tablespoons of liquid artificial sweetener and 3/4 cup vegetable oil into the raisins. Add the eggs.
Stir 1 teaspoon of baking soda and 2 cups of all-purpose flour into the mixture until a batter forms. Season with 1 1/2 teaspoons of ground cinnamon, 1/2 teaspoon of ground nutmeg and 1 teaspoon of vanilla extract. Pour the batter into a greased baking dish, and bake for 25 minutes at 350 degrees Fahrenheit.
Maple apple walnut cake, another sugar-free cake recipe, substitutes maple syrup for sugar. In one bowl mix together the dry ingredients: 2 cups of all-purpose flour, 1 teaspoon of baking powder, 1/2 teaspoon of cinnamon, 1/2 teaspoon of baking soda and 1/2 teaspoon of salt. In another bowl, combine 1/2 pound of melted butter, 1 1/4 cups of pure maple syrup, 1/2 cup of whole milk, 3 eggs and 1 teaspoon of vanilla. Fold the dry ingredients into the wet ones, then add 3 thinly sliced Granny Smith apples and 1/2 cup of chopped walnuts. Pour the batter into a baking dish, and cook at 350 F for 60 to 70 minutes.
