Poultry seasoning can be substituted for sage. Marjoram (also known as oregano) and rosemary can also be used in place of sage in a recipe.
Fresh sage has a distinct scent and is free of dry edges. The leaves should not have any spots. Sage leaves can be covered in olive oil and refrigerated for up to three weeks.
Substitution herbs, such as rosemary, should be stored in a glass of water in the refrigerator or in a sealed plastic bag. Fresh oregano can easily be grown in planters or in the garden and should have a deep green color.
