A highly rated Food Network recipe for Italian stuffed jalapeños mixes sausage, onion, red bell peppers and garlic with several cheeses. Yielding four to six servings, the recipe requires 15 minutes of preparation time and 15 minutes of cooking time.
To make Italian stuffed jalapeños, seed and devein 15 red or green jalapeños. Roast the jalapeños for 10 minutes at 350 degrees Fahrenheit on the center rack of the oven. Heat 1 tablespoon of canola oil in a saute pan and add 2 pounds of Italian sausage with the casings removed. Cook the sausage for five to seven minutes, then add 1/4 cup each of minced red onion and red bell pepper and 3 tablespoons of minced garlic. Cook the mixture for five minutes, or until softened.
Cool the mixture in a bowl until it reaches room temperature, then add 2 cups of mascarpone or cream cheese and 1/4 cup of Parmesan cheese. Mix the ingredients and season with salt and black pepper to taste. Spoon 1 tablespoon of the stuffing into each jalapeño half and top each with 1/2 teaspoon of mozzarella cheese. Broil the stuffed jalapeños on medium until the mozzarella cheese melts, then garnish with additional Parmesan cheese.
