To make a good marinade for striped bass, combine 1/2 cup of extra virgin olive oil with the juice of 2 limes and the zest of 1 lemon. Add 1/2 cup of chopped cilantro, 2 cloves of chopped garlic, and salt and pepper to taste. Marinate 4 8-ounce striped bass fillets in the mixture for at least one hour before grilling.
To cook the marinated striped bass, set a charcoal or gas grill to medium-high heat. Place the fillets on the grill, and cook for eight minutes on each side or until flaky.
To make an easy Asian-inspired striped bass marinade, combine 2 tablespoons of minced cilantro with 1 tablespoon of sugar, 3 tablespoons of fish sauce and 2 cloves of minced garlic in a large resealable plastic bag. Add 4 6-ounce striped bass fillets. Seal, and marinate for 20 minutes in the refrigerator, turning once. Remove the fish from the bag, reserving the marinade.
Heat a large, non-stick skillet that has been coated with cooking spray over medium-high heat. Add the fish, and cook for four minutes on each side or until flaky. Remove the cooked fish, and add the marinade to the pan. Bring the marinade to a boil, and serve it as a sauce over the striped bass fillets.
