A Triple-Decker Strawberry Cake from Southern Living gets extra flavor from fresh strawberries combined with strawberry gelatin. Strawberry flavoring also figures into the buttercream frosting.
To make the cake, pour 1 package white cake mix into a large bowl, and add 1 package of strawberry gelatin, 4 large eggs, 1/2 cup sugar and 1/4 cup flour. Mix in 1/2 cup finely chopped fresh strawberries, 1 cup vegetable oil and 1/2 cup milk. Mix for one minute, scrape down the sides, and beat an additional two minutes.
Pour the batter into three greased and floured cake pans. Bake for 23 minutes at 350 F. The cakes should spring back when pressed. Cool for 10 minutes in the pan, and then remove from the pan to cool completely.
For the strawberry buttercream frosting, beat 1 cup softened butter at medium speed until fluffy. Add 32 ounces of sifted powdered sugar and 1 cup finely chopped fresh strawberries. Beat at low speed until creamy.
To assemble the cake, place one cake on a plate. Spread the strawberry buttercream frosting over the top, and place the next cake on this. Press slightly, and then spread more buttercream frosting on top of this cake. Place the third cake on top, pressing slightly. Use the remaining frosting to frost the outside of the cake.
