To make Food Network's recipe, heat 1 tablespoon olive oil in a large skillet over medium heat. Add 2 minced garlic cloves and 1 tablespoon minced fresh ginger. Cook the mixture for one minute. Add 8 cups chopped fresh bok choy and 2 tablespoons reduced-sodium soy sauce, and cook for three to five minutes or until the bok choy's leaves are wilted and the stalk is tender. Cook for six to eight minutes or until lightly browned. Add 4 cups sliced bok choy and 1 small seeded and sliced jalapeño. Add the soy sauce mixture, and cook for two minutes.
