A good Southern recipe for fried chicken is Paula Deen's Southern Fried Chicken from the Food Network. This recipe uses flour, peanut oil, eggs, red pepper sauce and chicken seasoned with salt, pepper and garlic powder.
Heat peanut oil in a pot to 350 degrees Fahrenheit. Meanwhile, whisk together three eggs and 1 cup of hot red pepper sauce. Rub the chicken with a mixture containing 1 cup of salt, 1/4 cup of pepper and 1/4 cup of garlic powder. Dip the seasoned chicken in the egg mixture, and dredge it through 2 cups of self-rising flour. Fry the meat in the heated oil for eight to 14 minutes.
Another good fried chicken recipe uses a spicy flour mixture made from 3 cups of all-purpose flour, 1/2 cup of cornstarch, 1 1/2 tablespoons of garlic powder, 1 teaspoon of paprika and 1 teaspoon of crushed red pepper flakes. Add 2 1/2 tablespoons of salt and 1 teaspoon of pepper to the mixture. In a separate bowl, beat six eggs with a pinch of salt. Lightly rub the chicken tenders with salt and pepper, coat them in the flour mixture, and dip them in the beaten eggs. Dredge them once more in the flour, and fry them in hot vegetable oil for 15 minutes.
