Good Southern Living recipes are the Honey-Pecan Chicken Thighs and the Southwest Flank Steak recipes. The chicken thighs recipe requires 1/2 teaspoon each of salt, pepper, red pepper and thyme, 3/4 cup each of honey and mustard, 2 garlic cloves, 1 cup chopped pecans and 1/2 teaspoon of curry powder.
The Honey-Pecan Chicken Thighs recipe also calls for eight boneless chicken thighs. Mix together the salt, pepper, red pepper and thyme, and sprinkle the spices over the chicken thighs. In a medium-sized mixing bowl, combine the honey, mustard and minced garlic cloves. Place the seasoned chicken thighs in a shallow baking dish, and pour the honey and mustard mixture over them.
Cover the chicken thighs, and place them in the refrigerator for at least 2 hours. Chop the pecans into small pieces while the chicken is chilling. Remove the chicken from the refrigerator, and roll each thigh in the pecan pieces. Place each pecan-covered thigh on a lightly greased baking pan, and bake them for 40 minutes at 375 degrees Fahrenheit.
The Southwest Flank Steak recipe calls for 2 tablespoons each of fajita seasonings and olive oil, 1/2 teaspoon of dry mustard, 1 teaspoon of pepper and 1 1/2-pound of flank steak. Mix together the fajita seasonings, dry mustard and pepper in a small bowl. Rub the flank steak with the olive oil, and sprinkle it with the seasonings. Chill the steak for at least four hours. Grill the steak for eight minutes on each side at 350 degrees Fahrenheit.
