Classic Southern fried chicken requires heating 3 cups vegetable oil to 350 degrees Fahrenheit in a deep skillet. In a bowl, whisk together 1 1/2 cups milk and 2 large eggs. In a large, heavy plastic food bag, combine 2 1/2 cups flour with 2 tablespoons salt and 2 teaspoons pepper. Dredge 4 pounds of chicken pieces in the milk mixture, shake off excess, and place a few pieces at a time into the flour mixture. Shake the bag to coat pieces.
Cook a few chicken pieces at a time in hot oil until golden brown, drain on paper towels and sprinkle with salt.
Make Southern peach cobbler by peeling and pitting 8 fresh peaches and cutting into thin wedges. Place peaches into a large bowl, adding 1/4 cup each white sugar and brown sugar and 1/4 teaspoon cinnamon. Add 1/8 teaspoon nutmeg, 2 teaspoons cornstarch and 1 teaspoon fresh lemon juice. Coat peaches thoroughly and pour them into a 2-quart baking dish. Bake peaches for 10 minutes at 425 degrees Fahrenheit.
In a separate bowl, combine 1 cup all-purpose flour and 1/4 cup each white and brown sugars with 1 teaspoon baking powder and 1/2 teaspoon salt. Cut in 6 tablespoons unsalted butter, blending until coarse. Stir in 1/4 cup boiling water to combine dry ingredients. Take peaches out of oven and drop spoonfuls of topping mixture over peaches.
