To prepare Emeril's Favorite Cabbage, gather 1 head of cabbage, 1/2 pound bacon, 1 bottle of beer, 1/4 teaspoon Cayenne pepper and 1/2 teaspoon sugar. Also organize 4 cups onion, 3 bay leaves, 3/4 teaspoon black pepper and 1 1/4 teaspoons salt. Simmer for approximately one hour and serve warm.
When selecting the cabbage, consider 3 1/2 pounds of a white or green variety. Remove the cores and slice the leaves thinly. Reserve the cabbage in a clean bowl. In a Dutch oven, begin cooking the coarsely chopped bacon over medium-high heat until it turns brown and crispy. Add the onions, also thinly sliced, along with the sugar, bay leaves, Cayenne, salt and black pepper.
Allow the contents to cook for approximately five minutes, then examine. When the onions have softened, add the sliced cabbage to the pan, and continue cooking and stirring until the cabbage starts to wilt. Reduce the heat to medium-low, and pour the bottle of beer into the Dutch oven. Cover the pan, and allow the cabbage to simmer for about an hour. Afterward, taste the cabbage for texture and seasoning, adjusting or cooking longer if necessary.
When finished, remove the bay leaves from the cabbage, and serve.
