One good soup recipe is Real Simple's recipe for black bean soup. This uses store-brought salsa to reduce preparation times. Real Simple also has a cold cucumber soup recipe that's ideal for balmy summer days.
Heat 1 cup of salsa over medium heat in a large sauce pan, stirring frequently. Stir in 2 cups of broth and two 15-ounce cans of beans, and then bring to a boil. Reduce the heat to low, and then cover and simmer for about 15 minutes. Cool the soup, then puree in batches in a blender or food processor. Return the pureed soup to the soup pot and heat through. Add 1 or 2 tablespoons sherry if it is desired, and serve with sour cream, more salsa and lime wedges.
Another good soup recipe uses 1 pound of cucumbers, peeled, seeded and roughly chopped; 1/3 cup sour cream; 1/4 cup fresh mint leaves and 1 tablespoon of rice vinegar. One half teaspoon of kosher salt and a pinch of cayenne pepper are the seasonings.
Puree everything in a blender and serve chilled. Season with salt and pepper, and serve with bread and cheese. You can substitute the sour cream for an equivalent amount of yogurt if required.
